To prepare each month’s Market Menu, Head Chef Joo Won and his team head to the produce markets of the United Kingdom to catch ingredients just as they come perfectly into season. The dark and cold of January offers some of the finest umami-laden root vegetables, Cornish hake is at its peak and so is Cotswold chicken, so these provide the building blocks of our Market Menu this month. Expect classical French techniques to meet contemporary Korean to add life and mouthwatering complexity to the elegant simplicity of great British produce.
