Steeped in history and ripe with tradition, Port is the third-oldest protected wine region in the world, prefigured only by Tokaji and Chianti. This rich heritage and assurance of quality is nowhere better evinced than in the cellars of Grahams, a shipper which, since its founding in 1820, has been crafting some of the finest vintages the Douro valley can offer. Often reserved to match only with later courses in a meal, the range of styles of port means a perfect partner can be found for an enormous variety of dishes and in creating the menu for this months’ dinner, head chef Joo Won and his team have explored extensively.
