Inspiration for the menu and sourcing the very best of ingredients for Galvin at Windows takes chef patron Chris Galvin all over France. In September 2007, Carolyn Hart, food editor for the Telegraph Magazine accompanied Chris and general manager Fred Sirieix on a research mission to Rungis Market, the largest wholesale market for fresh produce in the world, where they demonstrated to her the abundance of ingredients on offer and created some recipes for her column which will document the trip and run in the magazine in the new year.
