It could be said that Scotland has one of the best “natural larders” in the world due to the North Sea and Atlantic Ocean offering everything from fish to prawns through to clams and oysters. The wild forests provide game such as deer and wild boar.
Since 1400, traditional Scottish cuisine has remained simple with an emphasis on quality and locally sourced ingredients. It promises to be a truly noble month with our head chef Joo Won creating a three-course lunch menu for £37 per person.
