Alsace…

In November 2007 Chris Galvin and Fred Sirieix took a research trip to Alsace with the aim of creating a special menu for the restaurant, showcasing the very best of Alsatian cooking. During the trip the pair visited Armand Sablon, the Galvin at Windows chef who won the Roux scholarship and is currently carrying out his placement in Colmar. Accompanied by journalist Andy Lynes, who will be documenting the trip for the Independent in January, Chris and Fred visited Alsace's most impressive vineyards, suppliers and restaurants in pursuit of inspiration for their menu which will be on offer exclusively in Galvin at Windows in January.
